Prepare Glasses & Ingredients
- Chill two tall glasses in the freezer for 5 minutes while you gather ingredients.
- Measure the butterscotch sauce, half-and-half, and vanilla into a small bowl; whisk briefly to loosen the butterscotch for easier pouring.
Build the Butterscotch Soda
- Fill each chilled glass halfway with ice (about 1 cup per glass).
- Divide and drizzle 1 tablespoon of butterscotch sauce inside each glass, allowing some to streak the sides for visual effect.
- Pour 6 fl oz cream soda into each glass, leaving room for the dairy and club soda.
- Add 1 tablespoon of the half-and-half mixture to each glass, then top each with 2 fl oz club soda to add brightness and lift the cream.
- Stir gently once with a long spoon to combine layers without flattening the fizz; taste and add a tiny pinch of sea salt to each glass to enhance the butterscotch notes.
Finish & Serve
- Top each soda with a generous dollop of whipped cream and a thin drizzle of the reserved 1 tablespoon butterscotch sauce.
- Garnish each drink with one maraschino cherry and serve immediately with a straw and long spoon for scooping cream.
